Like most good southern women, I love anything fried. Unfortunately, though, it no longer loves me back. So, I came up with a great alternative that is not only healthier (almond flour won’t affect your blood sugar or your waistline like traditional flour does), but is also quicker and easier to cook than traditional fried chicken. It literally takes just a few minutes to prepare this dish. Another great thing about this recipe is that it does not require the traditional (messy) dredge of flour, milk, and egg; making cleanup a dream!
- I don’t know about you but I am thrilled that summer is over and fall has finally arrived. Fall is my favorite time of year…especially now that I live in Northern Virginia where I get to experience the season in all its splendor.
