Like most good southern women, I love anything fried. Unfortunately, though, it no longer loves me back. So, I came up with a great alternative that is not only healthier (almond flour won’t affect your blood sugar or your waistline like traditional flour does), but is also quicker and easier to cook than traditional fried chicken. It literally takes just a few minutes to prepare this dish. Another great thing about this recipe is that it does not require the traditional (messy) dredge of flour, milk, and egg; making cleanup a dream!
Can you hear it? Spring is knocking on our door! It is the time of nature’s annual renewal after a long hard winter. In truth, these eggs are too tasty not to eat.
